Here's my 15 bean soup recipe Im sharing again for all of my fellow anemia sisters! 😙💅🏾 Brine: - 2 tsp baking soda - 2 tbsp salt - 1 large container of room temp water (at least 4 qts) Beans: - 20 oz 15 bean soup bag,      Cajun adds better flavor - 4 tbsp garlic, minced - 1 onion, diced - 1/2 bell pepper, diced - 3 to 4 cups ham, shredded/diced       (bone-in piece also preferred) - 4 tbsp butter - 3 tbsp black pepper - 1 tbsp thyme - 1 tbsp red pepper flakes - 8 cups chicken broth,        no salt or low sodium - 2 bay leaves - 1/2 cup lemon juice - 6 cups chopped kale Sort through your beans for any debris or bad beans. Soak them in a large container filled with brine solution for 3 to 4 hours. Drain water from beans and rinse with clean water. Add to crockpot. Saute onion and bell peppers until translucent in a tbsp of oil and add to beans along with garlic. **If using fresh garlic saute with the onions and bell peppers** Chop ham off bone (if using bone-in) and add meat and bone to beans. Top with the cajun seasoning pack and add the butter, black pepper, thyme red pepper flakes, broth, bay leaves and lemon juice.  Start crockpot on low with 6 hour cook time adding water throughout the cook if the beans seem too dry. The beans will thicken as they cool so lean towards a looser soup About 15 minutes before theyre finished add kale, cover and let cook until preferred tenderness. Notes: - Can also use sausage or chicken     instead of ham for less     salt content - Kale can can be substituted for     any leafy green like collards,     spinach or cabbage so add as     much as you want!
