Add the chopped tomatoes, half of the fried onions, green chillies, and salt. Cook for a few minutes until the tomatoes soften. 5. Add the biryani masala, homemade garam masala, red chilli powder, coriander powder, and turmeric powder. Sauté the spices for a few minutes. 6. Add the chicken and sauté well until it is coated with the masala. 7. Cover the pot and cook until the chicken is tender and the oil separates from the masala. 8. Add the yoghurt and mix well. Cook for a few more minutes. 9. Add some orange food colouring, if desired, and mix gently. 2. Prepare the Rice 1. Wash and soak the rice. 2. Bring plenty of water to a boil in a large pot. 3. Add the remaining whole spices, salt, and a little lemon juice. 4. Add the soaked rice and cook until it is about 80% cooked. The rice should still be slightly firm in the centre. 5. Drain the rice thoroughly. 3. Layer the Biryani 1. In a large pot, spread a layer of the chicken masala. 2. Add a layer of the 80%-cooked rice. 3. Add another layer of chicken masala and yoghurt, followed by the remaining rice. 4. Sprinkle the remaining fried onions and fresh coriander over the top. 5. Add a little orange food colouring in a few spots for the traditional biryani colour. 4. Dum Cooking 1. Cover the pot tightly with a lid. 2. Cook on low heat for 20–25 minutes. 3. Turn off the heat and let the biryani rest for 5–10 minutes before opening the lid. 4. Gently mix the layers from the sides and bottom before serving.
