@cheatmeats: Herb Crusted Lamb Rack 🍖🔥 You can’t go wrong with lamb on the trusty Weber Kettle and this added herb crust complements it perfectly. Recipe below; - For the herb crust combine Italian parsley, rosemary, 3 garlic cloves, salt and the juice of a lemon. - Crush in a mortar and pestle to create a paste. - Add tbsp fine parmesan, 2 tbsp breadcrumbs and 2 tbsp olive oil and mix. - Season the fat cap of the lamb with salt and cracked pepper. - Spread a light layer of Dijon mustard on the fat cap then apply a generous layer of the herb paste. - Add 1/2 chimney of lit charcoal to both sides of the Weber kettle, close the lid, and allow to heat up. - Place the crusted lamb in the middle of the kettle and allow to cook for 25-30 minutes. - Once the lamb has hit 52C internal temp gently transfer it to directly over the charcoal. - Allow to grill for 2 minutes each side until you have a nice crust. - Remove and allow to rest for 15 minutes before slicing to serve.
