@lady.sourdough: A previous reel I have breaks down the sourdough loaf recipe I use. For one loaf I need: 75g sourdough starter 450g unbleached all purpose flour 50g whole wheat flour 10g salt 365g filtered water So, if I am making 20 loaves and it’s all going into one of my larger white bins you often see in my videos, I’ll need to times all the ingredients by 20. Everything I do is measured by grams. And yes, I use a food scale every time. So I now need: 1500g starter 200g salt 1000g whole wheat flour 9000g AP flour 7300g water So how do I get 1500g sourdough starter? If I have 300g of inactive sourdough starter that needs to be fed, I can do 650g of water and 650g of AP flour. 650g water + 650g flour + 300g inactive starter = 1600g in total. Once your starter has peaked and is ready to use you will have 1500g starter for your dough and 100g leftover starter to use for anything else. Remember that grams is measured by weight, so even if the volume looks different just pay attention to the grams on the scale and you’ll be in good shape. Have any other questions or tips you’d like to include? Let me know in the comments! Happy baking! I’m off to go clean my oven out 🫣🫡 In home micro bakery #sourdough #sourdoughbread #levain #sourdoughstarter #microbakerykitchen #microbakery #foodietiktok #ladysourdough
