Take it from pasta saucing expert @Dan Pashman, inventor of the maximum-sauce-holding cascatelli pasta shape and author of the new book “Anything's Pastable.” He stopped by to give us a #MilkStreetCookingSchool class the other day and laid down a few pasta takes while he was here. For a noodle that properly transports sauce, he recommends one with nooks and crannies, such as casarecce, or ruffles, such as mafalde (aka mafaldine). Casarecci are good - but very different texture than penne etc. Look for pasta with ridges. And Faella Vesuvio are amazing for holding sauce.
