Fluffy fluffy buttermilk pancakes (or cartoon pancakes) - makes 6-7 Ingredients 1 egg 250 g buttermilk 1-2 tsp vanilla 1 tsp lemon zest 25 g sugar (2 tbsp) 150 g flour 1 tsp baking soda 1/2 tsp salt Method 1. Whisk egg, buttermilk, lemon zest and vanilla together. 2. Whisk flour, baking soda and salt together. 3. Whisk the wet ingredients with the dry. Dont overmix, everyone says lumps are okay, so that’s what we’re going for. 4. Let the batter chill on the counter for 15 minutes. I haven’t tried not chilling the batter, so i honestly don’t know if it matters. But it probably does. 5. Cook with a little oil on medium-high heat for about 30 seconds to a minute on the first side (until golden) then flip it and finish cooking on medium heat on the other side.
