just a suggestion but you can render down some of the fat cap by setting them down on the fat side in a warming up pan you have to hold the steaks there but then you can cook the steak in its own fat

Also if you cut it against the grain it will pull apart much easier. The top sirloin is a very tender piece of meat if cut and cooked correctly

Just a tip! Sear the fat of the steak first, it will melt into the pan and makes the steak taste better because you’re cooking it in its fat and it also makes the fat not chewy

If you have the time cook them in the oven at low temp (230) until they get to 15 degrees below your desired temp then sear them hot for 30 secs on each side. Done this for years nothing compares.

Have you tried a reverse sear? Cook the steak at 225 for 45-1hr, then sear for 2-3 min on each side. You’ll get the same crust without prep time
