BEEF TACO BITES 🌮 1 teaspoon canola oil 🌮 1/2 pound ground beef 🌮 1 tablespoon taco seasoning 🌮 1 cup refried beans 🌮 1/2 cup thick and chunky salsa 🌮 40 scoop shaped tortilla chips 🌮 1/2 cup shredded cheese blend 🌮 1/2 cup sour cream 🌮 1/2 cup chopped tomato 🌮 1/4 cup of chopped fresh cilantro Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside. Heat the oil in a large skillet over medium-high heat until just starting to sizzle. Add the ground beef and taco seasoning and cook, breaking up the meat with a wooden spoon, until the beef is browned, starting to crisp, and no longer pink. Stir in the refried beans and salsa. Arrange the scoop chips on the prepared baking sheet. Divide the meat mixture among the scoops, about 1 heaping teaspoon per chip. Bake for 5 minutes.
