@emthenutritionist: Speedy glow rice bowls with sticky peanut carrot slaw A quick easy rice bowl meal that is packed full of nutrition and ready in 15 minutes. It holds really well, and I also had this for lunch the next day. High in skin-supporting fats, vitamins C and E, this bowl is designed to support the glow inside and out. Make plant-based by simply swapping the fish to tofu! you will need to serve 2 2 trout or salmon fillets (or any protein you like) marinade: garlic, pinch of salt, honey, chilli flakes, optional. sesame seeds) 250g cooked seasoned rice 1 carrot 1/4 cucumber, deseeded 2 spring onions dressing: 1 heaped tsp peanut butter, 1 tbsp rice vinegar, 1 tsp garlic puree, 1 scant tsp honey, 1 tbsp soy sauce 1 medium avocado 1 lime, 1 tbsp chopped coriander or parsley for the haters Julienne the carrot, cucumber and spring onion. Toss with the dressing ingredients and leave to marinade. Preheat the oven to a 200c fan or the air fryer to 190c. Season the fish with garlic, honey, salt, chilli, and sesame seeds. Bake for 7-10 minutes until cooked. Chunkily mash the avocado with chopped herbs, 1/2 a lime juice, and some zest. Season with salt and pepper. Serve with a base of warm rice mixed with a little soy sauce. The baked fish, slaw and a dollop of avocado. #healthyfood #mealprep #healthyrecipes
