Remove and set aside. - In the same skillet, add the bell peppers, onions, and sauté until softened and lightly caramelized, about 6–8 minutes. - Return the steak to the skillet and toss everything together. - Slice the brioche buns in half horizontally, keeping them connected if possible. Place the bottom half in a greased baking dish or sheet pan. - Spread a generous layer of roasted garlic aioli over the buns. - Layer the smoked provolone cheese over the buns, followed by the steak and pepper mixture. Top with shredded mozzarella cheese. - Place the top half of the buns over the filling. Cover with foil and bake at 375°F (190°C) for 15-20 minutes. - In a small bowl, combine the melted butter, parsley, garlic powder, and salt.  - Remove foil and brush generously over the tops of the buns. Bake uncovered for 5-8 minutes or until buns are golden brown.
