@cookbakery: 🇮🇹Italienische Reihe Rezept 5: Risotto mit Pilzen Zutaten für 3 Personen als Hauptspeise: 200 g Risotto Reis (nicht waschen) 1 Zwiebel 1 Zehe Knoblauch 1 L heisse Brühe (welche ihr wollt. Ich hatte Fleischbrühe) 1 Hand voll geriebener Parmesan 200 g Pilze Oder Champignons Saft einer Zitrone Salz (eventuell nicht nötig, schmeckt vorher ab) Frisch gemahlener Pfeffer Etwas Petersilie Zubereitung: Nachdem ihr den Reis dazugegeben habt, kommt eine Kelle Brühe, Zitronensaft und das Lorbeerblatt hinein. Auf mittlerer Hitze wird alles geköchelt bis die Flüssigkeit verdampft. Dann kommt wieder eine Kelle Brühe hinein. Das geht so weiter, bis 2/3 der Brühe aufgebraucht ist. Wichtig: Ihr dürft die Brühe nicht auf einmal hinein geben. Sonst wird das nichts. Immer nach und nach, wenn die Flüssigkeit verdampft ist. Nach 2/3 werden die in Scheiben geschnittenen Pilze hinein gerührt und mit einer Kelle Brühe wieder weiter gerührt. Das geht so weiter bis die ganze Brühe verbraucht ist. Nun ist Zeit zum probieren. Wenn der Reis noch nicht durch ist, gibt ihr etwas Wasser hinein und rührt weiter. Zum Schluss werden Salz, Pfeffer und Parmesan hinein gerührt und angerichtet. Tipp: Lasst die Brühe bei niedriger Hitze auf dem Herd, damit sie wirklich heiss bleibt. #risotto #italien #italienischerezepte #cookbakery

sorry aber bei einem guten Pizrisotto werden Champignions vorher angebraten, anstatt Butter und Zwiebeln den Reis trocken erwärmen und mit Pilzfond auffüllen, aus Pilzen und Olivenöl eine Creme mixen.
