Soft and fluffy vanilla cupcakes:  Cupcake ingredients:  (make sure all are room temp!!)  - 113 g whole milk to be mixed with the oil - 85 g canola oil - 170 g whole milk to be mixed with the eggs - 1 tablespoon vanilla extract - 3 large eggs room temperature - 368 g cake flour - 368 g granulated sugar - 14 g baking powder - 1/4 teaspoon baking soda - 1/2 teaspoon salt  - 227 g unsalted butter softened to room temperature but not melted Frosting ingredients: - 1 cup butter, slightly softened  - 2-3 teaspoons Vanilla Extract - pound Powdered Sugar (or 4 cups) - 2 tablespoons Milk (as needed) - Pinch of salt  Cupcake Method:  1. Preheat your oven to 350 degrees Fahrenheit.  2. Line 24 cupcake tins with liners, set aside. 3. Place the 113g of milk in a separate measuring cup. Add the oil to the milk and set it aside.  4. To the remaining 170g of milk, add the vanilla and room temperature eggs. Whisk gently to combine. Set aside. 5. Place the flour, sugar, baking powder, baking soda, and salt into the bowl of your stand mixer with the paddle attachment. 6. Turn the mixer onto the slowest speed. Slowly add chunks of your softened butter until it is all added then let everything mix until it looks like coarse sand. 7. Add your milk/oil mixture all at once to the dry ingredients and mix on medium (speed 4 on kitchenaid) for 2 full minutes to develop the structure. 8. After 2 minutes, scrape the bowl. And mix again just to combine any lumps.  9. Slowly add in the milk/egg mixture while mixing on low, stopping to scrape the bowl one more time halfway through. Mix until just combined. Your batter should be thick and not too runny. 10. Scoop the batter into the liners filling halfway.  11. Bake for 15-16 minutes, or until the edges are golden brown.  12. Remove from oven and let cool to touch in the tins.  13. Then cool completely on a wire rack.  Buttercream frosting method:  1. For the frosting, add the butter to the mixing bowl along with the vanilla extract.  2. Mix the Butter and Vanilla together until they are fully combined (about 2 minutes on medium speed.) You want the Vanilla to fully meld with the Butter to get the best-flavored frosting possible. 3. Scrape the sides of the bowl down before moving on to the next step of the recipe. 4. Measure 1 pound of Powdered Sugar.  If you don’t have a food scale, the equivalent is 4 cups. 5. Add the Powdered Sugar to the mixing bowl.   6. Start your mixer (or electric beater) on the lowest setting. Keep on low until the butter and sugar are incorporated (about 30 seconds). Stop the mixer and scrape down the sides of the bowl. Increase the mixer speed to medium-high and mix for 30-45 more seconds until the frosting starts to be light and fluffy. 7. If the frosting is still dry or crumbly, add 1 teaspoon of Milk and mix again. 8. Taste and keep adding milk to your liking.
