Ingredients: - 1 cup dry green lentils - 1 cup quinoa, rinsed - 2 cups water - 4 cups chopped kale (stems removed) - 1 cup cooked sauerkraut or kimchi (fermented vegetables) - 1 cup roasted chickpeas (tossed with turmeric, cumin, and a pinch of black pepper) - 1/2 cup pickled red onions (prepare ahead) - Juice of 1 lemon - 2 tbsp tahini (dairy-free) - 2 tbsp olive oil - 1 tsp turmeric powder - 1/2 tsp black pepper - Salt to taste (limit sodium) - Fresh berries (blueberries or strawberries) for serving Instructions: 1. Cook lentils in 2 cups water until tender, about 20-25 minutes; drain excess water. 2. Cook quinoa in 2 cups water until fluffy, about 15 minutes. 3.
