The horchata was created in Valencia in the Middle Ages... originally it is made with chufa but when taking the recipe to other countries they have adapted it with rice

Horchata de Chufa is originally from Valencia, Spain. It is also vegan, made from Yellow Nutsedge (Tigernüsse), that is naturally very sweet and oil rich. You should give it a try.

The Arabs brought horchata to Spain, then Spaniards brought to Mexico and somehow they made a complete different version. You should say “Mexican horchata”, not just Horchata.
