@tessbegg: Tofu & broccoli stir fry meal prep😍 Hit the save button and try this delicious and easy high protein recipe! Serves 3 Tofu: 450g organic firm tofu 1 tbsp corn flour Pinch of salt and pepper Other: 1 large broccoli, cut into small pieces 1 brown onion, sliced 5 garlic cloves, finely chopped 1 tbsp fresh minced ginger Sesame seeds Cooked rice, enough for 3 servings Sauce: 3.5 tbsp soy sauce 1 tbsp rice wine vinegar or mirin 1 tsp vegan fish sauce (optional) 1.5 tbsp brown sugar 2 tbsp water 1/2 tbsp corn flour Press the tofu with paper towel to remove excess water. Slice the tofu into small cubes and add to a bowl along with the corn flour, salt and pepper. Toss to coat. Heat oil in a pan over high heat, add the tofu and cook until golden. Set the tofu aside. In the same pan add extra oil if needed and cook the onion, ginger and garlic until fragrant. Add the broccoli to the pan and cook for 5 minutes or more until tender. In the meantime, whisk together the soy sauce, rice vinegar, sugar and vegan fish sauce. In a separate bowl mix the corn flour and water until smooth, then pour that into sauce and whisk. Add the tofu back in and pour over the sauce. Toss to coat and cook for a further few minutes to allow sauce to thicken. Once ready, allow to cool then portion it between 3 containers along with the rice.
