@mr.colitiscrohns: This pasta is creamy and delicious, but most of all it’s a great way to get more greens into your diet if you struggle to get them in for whatever reason. I used to be super nervous when eating veg, and I’d always limit the amount of broccoli I ate - so Bonnie chucked this together. It’s super simple and takes less than 20 minutes! Ingredients: 250g Pasta of your choice For the sauce: 2 large avocados Half a head of broccoli 1 garlic clove Roughly 5 tbsp olive oil Juice of 1 lemon A few basil leaves A really good grating of Parmesan Salt & pepper Pasta water to loosen up Put your pasta on in some salted boiling water. Meanwhile steam your broccoli until tender, making sure not to overcook it. Absolutely do not overcook the pasta either ;) al dente all the way! When the broccoli is cooked, add all sauce ingredients to a blender and whizz until smooth - add more liquid if you need to loosen it up a little. Taste as you go and add more seasoning/cheese if you wish! When the pasta is done, stir it all in. It’s as simple as that and you can experiment with other green veg - we’ve added asparagus in the past and it works really well, or just stick to avocados! 🥑 We hope you enjoy this one 🥑🥦🧀🍋
