@pureencapsulations: #PureEncapsulationsPartner @Colorful_Superfoodie Carrot Cake Muffins 🥕🍰 Carrot cake has always been one of my favorites, and what better way to start the day than these delicious glazed muffins with added health benefits 🥰 This recipe is made with healthier ingredients that are gluten, dairy, and refined sugar-free! I added @pureencapsulations Inositol powder (link in bio), which is excellent for supporting emotional wellness, a healthy mood, and ovarian health. Supporting my mental well-being is one of my top priorities, and I have been enjoying incorporating Inositol in my recipes lately.‡ Ingredients: • 2 cups Gf baking flour • 1 cup shredded carrots • 1/2 cup coconut sugar • 1/4 cup @pureencapsulations Inositol powder (link in bio) • 1 cup dairy free milk • 1/3 cup apple sauce • 1/3 cup avocado oil or melted coconut oil • 2 tbsp ground flax mixed with 6 tbsp filtered water • 1 tbsp cinnamon • 1/2 tsp ground ginger • 1/2 tsp cardamom • 1 tsp baking soda • 1 tsp baking powder For the icing • 4 tbsp coconut butter • 4 tbsp full coconut milk • 2 tsp maple syrup Directions: 1) In a bowl, mix together the gf baking flour, coconut sugar, Inositol powder, baking soda, baking powder, and spices. 2) In a separate bowl, mix together the df milk, flax "egg," applesauce, and oil. 3) Combine the wet and dry ingredients and then fold in the shredded carrots. 4) Scoop about 1/4 muffin batter into 12 muffins cups. 5) Bake at 350 degrees for about 20-22 minutes. When they are done set, then aside to cool. 6) Make your icing by adding the coconut butter, coconut milk, and maple to a small sauce pan over low heat. Stir frequently until an icing consistency forms. 7) Drizzle the glaze over the muffins and store in an air tight container and enjoy throughout the week. ‡These statements have not been evaluated by the Food & Drug Administration.
