I’m new to sourdough, I like a sour taste to mine. Is 1:2:2 drowning out my starter with dough that isn’t “sour”? Does that make sense? Like diluting it?

How much do you discard with the 1-4-4 ratio? My 1-1-1 has been so dense so I wanted to try this way instead!!

I only bake with my starter 1-2 times a week, can you give me a maintenance suggestion? I want to use your method but it’s so much to discard daily. I typically feed 1-1-1 using 30g of starter.

Switched it up last night to 1:4:4 and wow!! Do you continue the 1:4:4 everyday? If I’m not baking today what do I feed tonight?

Is this supposed to give us enough for the 250 g for the 8 hour loaf recipe? I did this last night hoping to bake today and only coming up with 211 g total 🥴

I’ve been feeding 1:1:1 and it makes good bread but my starter has a strong vinegar small that worsens when it starts to fall. Would the higher feed ratio improve this?

I made my very first loaf of sourdough today. It looks nothing like yours. It was somewhere between a weapon or an enormous hockey. Puck was dense, hard and not pretty. HELP

If I were to start this at noon using 1-4-4.5 ratio, and I use my thermal heating pad, what time do you think it would rise to peak?

Where is the best place to keep your starter? My house is between 75°-77°. And do you feed this ratio twice a day? Mine hasn’t been doing good with rising.

Weak/acidic starter will fall quickly after it peaks, dough is slower to rise during BF or doesn't rise at all, loaves start to flatten after being shaped, and bread is dense and gummy.

If you want to bake two loaves at once - do you suggest doubling these amounts? 60g starter, 250g water, etc…?
