Ossobuco Milanese with Saffron Risotto and Gremolata FIND THE RISOTTO RECIPE ON MY INSTA 😉😘 Serves 8 Ossobuco alla Milanese is Milan-style veal shanks braised in a tomato and white wine sauce until the meat is extra tender and falling off the bone. Traditionally served with saffron risotto and topped with zesty gremolata, it's the ultimate comforting winter meal. You’ll need For the Ossobuco: 1 kg bone-in veal shanks 4 tbsp cake flour (for dusting) 5 carrots, finely chopped 3 celery stalks, finely chopped 2 onions, finely chopped 2 cloves garlic, finely chopped 1 bay leaf or a sprig from the garden  3 sprigs rosemary 4 tbsp tomato paste 4 cups (1 L) chicken stock 3 cups dry white wine Salt and pepper to taste 4 tbsp olive oil For the Gremolata: 1/4 cup flat-leaf parsley, finely chopped Zest of 1/2 lemon 1 clove garlic, finely grated  Now make it For the Ossobuco: - Brown the Veal: Season the veal shanks with salt, pressing it into the meat so it sticks. Dredge the veal shanks in flour, shaking off any excess. Heat 4 tbsp of olive oil in a large pot over medium-high heat. Once hot, brown the veal shanks on both sides. Remove and set aside on a plate. - Make the Sauce: In the same pot, heat more olive oil if necessary. Add the chopped carrots, celery, and onions. Sauté over medium heat until softened but not browned. I like to put the lid on to create some steam while sautéing the veg.  Add the garlic and sauté for 1 more minute. Stir in the tomato paste and cook for a few minutes. Pour in the white wine and reduce the liquid by half. Add the chicken stock and stir to combine. Place the browned veal shanks back into the pot. Add the bay leaf and rosemary sprigs. Season with salt and pepper. Cover with a lid and simmer gently for 2 hours, or until the meat is tender. If using small veal shanks, you may need to remove the meat and continue to reduce the sauce before adding the veal back. It’s important the sauce is reduced and slightly thickened. For the Gremolata: Combine the parsley, lemon zest, and minced garlic in a small bowl. Mix well and set aside. Make the risotto - find the recipe over on my insta.
