🥩🌮 EASY STEAK TACO SALAD WITH CHIPOTLE SAUCE 🌶️✨ This easy steak taco salad is packed with juicy steak, crunchy veggies, creamy feta and a smoky homemade chipotle dressing, all served on crispy toasted mini tortillas. Perfect for a high-protein lunch or easy summer dinner! 🛒 INGREDIENTS 🥩 Steak @MuscleFood 🌮 Mini tortillas 🥒 Cucumber, chopped 🧅 Onion, finely chopped 🌽 Sweet corn 🥬 Watercress 🧀 Feta cheese, crumbled For the Chipotle Dressing 🌶️ 🥣 Greek yogurt 🍋 Juice of ½ lemon 🫒 Olive oil @GOOD PHATS 🌶️ Chipotle paste ✨ METHOD 1️⃣ Cook the steak in a hot cast iron skillet until done to your liking. Remove from the pan and leave to rest. 2️⃣ Whilst the steak rests, add the mini tortillas to the same skillet and toast until golden and crispy. 3️⃣ Make the chipotle dressing by combining Greek yogurt, lemon juice, olive oil and chipotle paste. Mix until smooth. 4️⃣ In a large salad bowl, add the chopped onion, cucumber, sweet corn and watercress. Pour over the chipotle dressing and toss everything together. 5️⃣ Add crumbled feta cheese and give it another mix. 6️⃣ Serve the salad on top of the toasted mini tortillas and slice the rested steak over the top. 7️⃣ Finish with extra crumbled feta and an extra drizzle of the chipotle sauce.
