Vietnamese Inspired Lemongrass Chicken Noodle Bowls (serves 4): Lemongrass Chicken (makes 4 chicken thighs (also in the video I was making a bigger batch to have some chicken thighs for meal prep so ignore): 4x raw chicken thighs (about 600g) 2 tsp minced garlic 1 tsp chicken stock paste/powder (optional) 1-2 tsp chilli paste or flakes 2-2 tsp lemongrass paste 1 heaped tsp sweetener - I use monkfruit 2 tsp low sodium soy 1 tsp fish sauce 1 tsp rice wine vinegar  1. Marinate chicken for at least 1 hour  2. Airfry at 190c for 20-22 minutes flipping halfway Sauce: 1/2 cup boiling water  4 tbsp fish sauce 1 tbsp low sodium soy sauce 1 tsp minced garlic 1 tbsp sweetener- I use monkfruit but you can use normal sugar  1/2 lemon juiced 1 tbsp rice wine vinegar (sub for white) 1 tsp chilli paste or flakes Noodle Bowl: 160g dried vermicelli/bean thread noodles- 40g per bowl  1-2 carrots, julienned or thinly shredded 1-2 cucumbers - julienned  Iceberg lettuce (I forgot to add it in the video) 20g crushed peanuts (5g per bowl) 4 tsp (12g) of fried shallots (1 tsp/3g per bowl) Green onion to serve  1. Prep vericilli noodles by soaking in hot water for 5 minutes (or per packet instructions), then drain and rinse under cold water and let it rinse well 2. Place equal portions of noodles in each bowl, top with veggies, and 1 sliced chicken thigh per bowl. Top with crushed peanuts, fried shallot and green onion. Serve with 2-3 tbsp of the sauce/dressing. I like to keep the sauce seperate but you can add it straight into the bowl To serve: Can eat cold OR can heat up in microwave for 1 minute (does not affect veggies) OR alternatively keep the chicken seperate, re-heat then add it (along with the sauce) to the noodle bowl and veggies on the day of consumption.
