You can absolutely mix your flour water and levain together then let it hydrate for an hour - then add salt during your first stretch and fold to save some time!

if your house is cool it will take longer than 4 hours till to BF. B&B has some good videos showing how to know when BF is done

The perfect loaf is the best. Tip. Wet your hands before stretch and folds. It will not stick to your hands and hydrate the dough.

Highly suggest getting a square container to make your dough in so you can accurately see how much it’s risen during the bulk fermentation. Mine usually takes 5-6 hours to rise 50%

You might want to invest in a heating pad for your dough - one where you can control the temperature, that has a probe you can leave in your dough to measure its temp. Use one that’s for plants.
