School Night Suppers ✨ Part 8! This Loaded Ranch Baked Potato Soup is one of my favorite easy crockpot dinners because you can let it cook on low all day while you’re at work and the kids are at school. My 5 year old calls it “the best soup ever” 😂 We serve ours with grilled cheese and it’s such an easy school night dinner! 🥔 LOADED RANCH BAKED POTATO SOUP Ingredients: • 6 large baking potatoes, peeled + cubed • 1 large onion, chopped • 4 cups chicken broth • 3 garlic cloves, minced • ¼ cup butter • 2½ tsp salt • 1 tsp pepper • 1 packet ranch seasoning • 1 cup heavy cream or half-and-half • 1 cup shredded sharp cheddar • 3 tbsp chives or green onions • 8 slices bacon, cooked + crumbled • Sour cream, optional • Extra cheese for topping Instructions 1. Add potatoes, onion, broth, garlic, butter, salt, and pepper to a crockpot. Cook on HIGH 4 hrs or LOW 8 hrs, until potatoes are tender. 2. Lightly mash to thicken. 3. Stir in ranch seasoning, cream, cheddar, and chives. Let warm through. 4. Top with sour cream (optional), bacon, cheese, and extra chives before serving. #crockpotrecipes #slowcookerrecipe #weeknightdinner #EasyRecipe #familydinnerideas
