Smoked Lamb Ragù Bianco… loaded with super tender, juicy and melt-in-your mouth smoked leg of lamb that’s been slowly braised in a rich and delicious white wine and bone broth situation. This recipe is inspired by a dish I ate at Stock Bar in Toronto a couple months ago and I haven’t stopped thinking about it since. To add even more flavour, I smoked the lamb first on the @Traeger Grills (I have the Timberline XL) with Apple wood pellets before searing it in a pan and braising it until it falls apart. Finish the ragù with some baby spinach and toss with your favourite pasta – I like it with rigatoni but pappardelle is also amazing – some of the pasta water and freshly-grated Pecorino Romano. Finish with a drizzle of EVOO some more pecorino and emjoy! It's hearty, comforting and indulgent, but also surprisingly light and made with very simple ingredients. This will quickly become a new family favourite. And if you don’t have a smoker, just skip the first step, go straight into searing the lamb and then braising it in your oven #TraegerAmbassador .
