Here’s what you’ll need Feeds 6-8 people 1.5 cups brown lentils 1/2 of the silverbeet bunch 3 large white potatoes cubed 4 gloves garlic crushed 1 large brown onion diced 50 g butter 1 single bunch fresh coriander ( chopped ) 1. 5 cup fresh lemon juice As much water as needed . Salt to your own taste SOAK lentils for minimum one hour prior to starting . Wash silverbeet spinach well and chop finely (leaving out the white stems ). Bring lentils to a boil , add cubed potatoes and silverbeet . Add enough water to cover spinach so it cooks through (keep in mind the spinach will omit a little water ). Salt to taste In a pan fry butter cook off garlic and coriander for a minute then add to the soup . Fry off the onion with some more butter and add it to the soup . Let it simmer until the lentils and potatoes are cooked . Half cover . Adding water as you need to as you go . Finish off with the lemon juice .
