This is your sign to cook up the creamiest garlic mushroom gnocchi by @makan.thing for your #GalPal brunch this weekend 🤤✨❤️ #fyp #Recipe #homerecipe RECIPE: *Gnocchi* 1. Take 5-6 big potatoes- Start by poking the potatoes all over using a fork. Place them in a preheated 190c oven for about an hour. 2. Once they have cooled down, remove skin from potato and mash/grate the potato to fluffy little bits. Add one large beaten egg then sift about 100gms All-purpose flour. 3. Bring the potatoes into a ball of dough using a scraper and mix everything up so the egg and flour are evenly distributed. Start using your hands to press it into one cohesive mass.  4. Once the mass has formed, start kneading for about 90 seconds for slightly toothsome gnocchi. 5. Once the dough is smooth, roll it out into a fat little log and cut into four even pieces. Sift some all-purpose flour onto a work surface then roll each piece of dough into a 1” thick rope. Cut it into desired size gnocchi shape. 6. Once all of the dough has been cut, place onto a rimmed baking sheet and cover with a dusting of all-purpose flour. Place in a freezer to solidify for 1 hour. *Creamy mushroom sauce* 1. Heat 2 tbsp of olive oil in a frying pan over a medium heat 2. Add 2 red onions and season with salt. Sauté for 15-20 minutes until caramelised. Stirring regularly. Add 1/2 tsp of brown sugar for extra sweetness. Set aside. 3. Add 2 tbsp of oil along with 50gms butter to the pan, once the butter has melted. Add 500gms of assorted mushrooms of your choice. Cook for about 10 minutes, turning only regularly in the pan, allowing it to sit a little to turn golden. 4. Add 4 garlic clove (thinly sliced) along with the caramelised onions to the mushrooms. Stir through (200ml) cream and add half a lemon juice to this along with lots of freshly ground black pepper and season with salt. Turn off heat and set aside. 5. Bring a large pot of water to a boil and salt well. Add the gnocchi and boil for 2 minutes (or until it floats to the top) 6. Give the gnocchi and the creamy sauce a quick mix on low heat. 7. Serve with grated parmesan and parsley.
