Then stir in olives. Add water and mix with a spoon or rubber spatula until incorporated. If the dough is too dry add more water. It’s supposed to be sticky and sloppy. Cover with plastic wrap to proof for 2-2½ h in a warm place until doubled in size. Turn dough onto a floured surface with a scraper or spatula, flour your hands and stretch & fold each side towards the center/other side (about 4 times). Tuck in the edges to form a round dough, roll it over, sprinkle flour on top and let it rest for another 30 min covered. Place it on a silicon mat or parchment paper and score it. If the flour on top is already absorbed, sprinkle some extra flour on top before scoring it -At the same time preheat oven to 480°F/250°C with a Dutch oven incl. the lid inside for at least 30 min. Place dough in the pan, followed by an ice cube (this will make it rise even more), cover and bake for 30 min. Then remove lid and bake for another 10 min until top is golden brown.
