CHEAP MUESLI ➡️ GRANOLA! 🍯 🥥 This is how I turn a 900g packet of cheap muesli into a BIG batch of my super crunchy and delicious Honey & Coconut Granola! ⬇️ 🍎 I love the way the dried fruit gets caramelised and chewy in the oven, but you can also use 5 cups of plain rolled oats and mix in 1 1/2 cups of dried fruit post-baking.  🌟 Note: This makes a pretty large batch, so you may want to halve the recipe if you don’t go through granola as quickly as us!  INGREDIENTS  - 900g bag of @Woolworths_au Traditional Muesli - 1 cup nuts of choice - 1 cup seeds of choice  - 3/4 teaspoon salt - 1 teaspoon ground cinnamon - 1 cup melted coconut oil - 3/4 cup honey - 2 teaspoons vanilla extract - 1 cup coconut flakes METHOD 1. Preheat your oven to 180°C. Line two large trays with baking paper. 2. In a large mixing bowl, combine the bag of muesli with the nuts, seeds, salt, and cinnamon. Mix well. 3. Add in the melted coconut oil, honey, and vanilla extract. Stir until all of the dry ingredients are coated. 4. Spread the granola mixture out onto the prepared trays, evening out the tops with a spoon.  5. Bake in the preheated oven for 10 minutes, then add half of the coconut flakes to each tray. Stir to combine, then press the mixture down into the trays. Bake for another 10 minutes, then stir once more, press down firmly, and bake for a final 5-10 minutes. 6. Remove the trays from the oven and allow the granola to cool FULLY. This is when it becomes nice and crunchy, and clusters form.  7. Once cooled, break up the granola. PEANUT BUTTER NOODLES 🥜⬇️ 🥦 These Peanut Butter, Roasted Broccoli & Edamame Noodles are one of our absolute favourite dinners (toddler included!) 🙌🏼 They are SO satisfying and flavourful, and easy to prepare too!  INGREDIENTS  Roasted Veg: - 1 large head of broccoli, chopped into florets  - 1 large red capsicum, sliced into strips - 2 tablespoons sesame oil - salt & pepper, to taste  Noodles: - 360g uncooked ramen noodles  - 1 tablespoon sesame oil - 3 garlic cloves, freshly minced - 2 teaspoons freshly grated ginger - 2/3 cup creamy peanut butter  - 1/4 cup tamari soy sauce - 1/2 cup water - 1 lime, juiced (approx. 2-3 tablespoons)  - 2 tablespoons brown sugar  - 200g frozen edamame beans, thawed  - 6 spring onions, thinly sliced - 1/2 cup crushed peanuts METHOD 1. Preheat your oven to 210°C and line two large trays with baking paper. Lay out the broccoli and capsicum on the trays, drizzle with sesame oil, and season with salt and pepper to taste. Roast for 15 to 20 minutes until they begin to char.  2. Meanwhile, cook the noodles according to the package directions, drain, and set aside.  3. In a large skillet or saucepan, heat the sesame oil over low-medium heat. Add the garlic and ginger, and cook for a couple of minutes. Add in the peanut butter, soy sauce, water, lime juice, and brown sugar. Stir until smooth and well combined.  4. Add the noodles to the sauce and toss. ONE-PAN GNOCCHI BOLOGNESE 😍⬇️ 🍅 Fresh gnocchi cooked into a rich lentil bolognese sauce and covered in cheese = 🤤 🙌🏼 Vegetarian or not, I think you will LOVE this! It’s the one-pan, meat-free meal of my dreams 😍 INGREDIENTS  2 tablespoons olive oil 1 brown onion, very finely diced 2 garlic cloves, freshly minced 1 large carrot, very finely diced 1 large celery stalk, very finely diced 400g tin lentils, drained and rinsed  1/4 cup walnuts, crushed finely  1/2 teaspoon salt 1/4 teaspoon black pepper 2 tablespoons tomato paste 800g canned crushed tomatoes 1 teaspoon beef flavoured stock powder 1 cup water 1 teaspoon worcestershire sauce 2 teaspoons white sugar  1 teaspoon dried basil 1 teaspoon dried oregano  1 large / 2 small bay leaves  500g fresh gnocchi 1/2 cup grated parmesan cheese 1/2 cup grated mozzarella cheese  METHOD 1. Heat the olive oil in a large, deep frying pan or skillet over medium-low heat. 2. Add the onion, garlic, carrots, and celery. Cook for 5 minutes, or until the veggies are softened and the onion turns golden. 3. Increase the heat to medium-high, and add the lentils, walnuts, tomato paste, salt and pepper. Cook until the mixture begins to caramelise and stick to the pan.  4. Add the crushed tomatoes, beef stock powder, water, Worcestershire sauce, sugar, oregano, basil, and bay leaves to the pan. Turn the heat down to low, then simmer covered for 20 minutes. 5. Remove the bay leaves, then stir through the gnocchi. Cook, covered, for 3-4 minutes, or until the gnocchi has fully softened. 6. Top with the parmesan and mozzarella cheeses, place the lid on, and cook for another couple of minutes until the cheese melts.
