@nikittalouise1: aaannnddd we are back with these sweet chilli chicken skewers!! Actually filmed this before I went away, there was no way I was cooking last night 😴 To make 4 skewers for 2 people you will need: 650g boneless & skinless chicken thighs 2 tbsp olive oil 2 tsp smoked paprika 1 tsp cumin 1 tsp chilli powder 1 tsp oregano 1 tsp garlic powder 1 tsp onion powder 1 red pepper sliced 1 yellow pepper sliced 6 tbsp sweet chilli sauce 2 tbsp soy sauce 1 tsp garlic puree 1 tsp ginger puree Chop the chicken up in to large chunks then add to a bowl with the oil and all the herbs & spices. Mix well until all the chicken is coated then split between 4 skewers. Cook in the airfryer for 15 mins at 200. Whilst this is cooking to a pan add the peppers and fry off for 5 mins on a medium heat. To a small bowl make up the sauce by mixing together the sweet chilli sauce, soy sauce, garlic puree & ginger puree. Add half of the sauce to the pan with the peppers and leave to simmer on a low heat until it starts to bubble. With the other half of the sauce brush the skewers with it after the first 15 mins of cooking then cook for a further 10 mins at 190 repeating every 5 mins. Once the chicken is cooked serve with rice with the sauce & peppers poured over then top with the chicken, some spring onion & chilli (optional)
