Timman Ahmar تمن احمر @canarybasmati Ingredients: - 2 chickens - 2 onions - 1 can of tomato - 4 tbsps tomato paste - 3 cups rice - salt - pepper - 3 bay leaves - a cinnamon stick - 4 cardamom pods - 2 tbsps ghee - 4 to 5 cups water - start by searing the chicken with the aromatics and an onions in a drizzle of ghee till it takes a slight color. - add the water to the pot and cook the chicken only for 20 minutes. - meanwhile wash and soak the rice. - place the chicken on a baking tray and brush it with 2 tbsps of tomato paste mixed with salt paprika and black pepper. - place the chicken in the oven for 45 minutes at 190c and broil it the last 10 minutes for a nice color. - saute a diced onion on the pot. Add 2 tbsps of tomato paste and cook it for 2 minutes ( I mistakenly said 20 minutes in the video). - add a can of blended tomatoes ( optionally ) and the rice. Then the chicken stock ( 1 cm above the rice ) - let the pot boil uncovered for 10 minutes or till the water level goes down and the rice starts soaking the stock. - drop the heat to the lowest possible. Cover and let it cook for 20 minutes. - leave it covered for another 15 minutes for best results. - top the rice with the chicken. Garnish with some green.
