Ingredients : 🌼one carrot, one yellow pepper, two celery stalks, two tomatoes, half a lemon, one little fennel 🌼500g risotto 🌼1 onion 🌼50g parmigiano reggiano Steps : ✨Clean the vegetables. Cut carrots and peppers lengthwise into quarters and then into slices. ✨Thinly slice the celery stalks and dice the tomatoes. Cut the stalks and a small piece from the underside of the fennel, quarter the bulb lengthways and then slice thinly. Peel and chop the onion. ✨Heat 2 tbsp of olive oil in a frying pan over high heat and fry the onion for 2 minutes. ✨Add the carrot, yellow bell pepper and celery and cook for 5 minutes. ✨Add the fennel and simmer everything for 15 more minutes. Add the spices of your choice. ✨In a saucepan, heat 1 tablespoon (olive) oil over medium heat and pour in the risotto rice. Stir well. ✨Add 0.5 liters of boiling water and a risotto herb mixture (or a stock cube), stir well and simmer over low heat for 5 minutes. ✨Then when the water is almost absorbed, add 0.5 liters of boiling water again,a little at a time and cook gently for 10 minutes, stirring occasionally. (The rice is ready when the outside is soft, but the inside is still crunchy) ✨After the 15 minutes of cooking, add the juice of half the lemon, mix and finally, add the parmigiano. ✨I plated it with basil leaves and the underside of the fennel, also added more salt and pepper. #whatsfordinner #healthyfood #easydinnerideas
Ingredients: ✨1 broccoli ✨1 zucchini ✨250g ricotta ✨50g grated pecorino romano cheese ✨1 onion, 2 cloves of garlic Steps: 1. Cook the broccoli in boiling water for 10’. 2. On a pan, add a little bit of olive oil and the thinly sliced garlic and onion. Fry for 2’ and add the cooked broccoli, cut in pieces, add salt and pepper and the ricotta. Cook together for 5’ until smooth (it’s normal to have chunks of broccoli ofc) 3. To replace the traditional lasagna pasta, I used thinly sliced (1cm wide) zucchini. 4. Layer the lasagna : thinly sliced zucchini, ricotta/broccoli mix and thinly sliced zucchini again. Top with grated parmigiano cheese if you want! 5. Bake for 25’ at 200 degrees Celsius.
