@saras_eats_and_sweets: Mushroom and Bell Pepper Egg Bites! Ingredients- - 1 dozen eggs - 12 button or cremini mushrooms, sliced - 1 red bell pepper, diced - 3/4 cup milk of choice - salt and pepper to taste - 2 tsp. Garlic powder - 2 tsp. Onion powder or onion salt - 1/2 cup sharp cheddar cheese - chives for garnish Directions: Begin by preheating your oven to 350°F . Then, wash/chop your mushrooms and bell peppers. Sauté your mushrooms and peppers over a medium high heat with olive oil for 10 minutes, or until they have developed a golden brown color. Allow this mixture to cool slightly after it’s finished sautéing (you will be adding it to your egg mix and don’t want it to start cooking the eggs if it’s too hot). Next, crack your 12 eggs into a large bowl, then add your milk, salt, pepper, onion powder/salt and garlic powder. Whisk to combine. Then add in your sautéed mushrooms and peppers, whisk again to combine. In a silicone muffin tin, evenly distribute your egg mixture (it should fill all 12 muffin cups). Top each individual egg bite with a sprinkle of cheddar cheese. You will need to transfer this to the oven, and to make this step easier, I would recommend placing the silicone muffin tray on a baking sheet BEFORE you fill it with the egg mixture. This will help to prevent spills enroute to the oven (I learned this the hard way 🥲). Bake for 25-35 minutes, or until the eggs bites are fully set and golden brown. Top with chives once it’s done baking and serve!
