question from a humble allotmentor... I have always wondered why the ridges. why not just bosh straight in the flat ground? I've noticed my neighbours doing ridges (not like this) but I don't know why

When I was a young lad back in the 70s, we use to do potato picking in Devon… was always treated to fabulous meals by the farmers wives…. No money though 😂😂
