Mix the bread crumbs with the egg, parsley, lemon zest, Pecorino cheese, garlic, salt, and pepper. Preparing the sardines: Fill one sardine fillet with a spoonful of stuffing and cover with another fillet. Coat the sardines in semolina, then in beaten egg, and finally in breadcrumbs.
