@natsnourishments: Making the most of asparagus season!! This is quick and easy, perfect for a midweek meal! Ingredients: 180g asparagus 2 big handfuls of spinach 1 jar of cannellini beans 1 shallot 4 cloves of garlic 1/2 a lemon 200g veg stock Parmesan to serve Method: Slice the asparagus, dice the onion and mince the garlic . In a hot pan, sauté onion in olive oil for a couple minutes before adding garlic then asparagus. Sauté for another 4/5 minutes and then add the beans and stock. Bring to a gentile boil and then let simmer for 5 minutes before adding in the spinach and letting it wilt.
