try soaking your potatoes in cold water for a bit before cooking them. it helps get some of the starches out. seems to work better for me at least

for the potatoes- i cook on medium heat and literally dont touch them til they start to crisp on the bottom. it takes awhile. also. try tossin then in a little cornstarch. doesnt have to be alot.
