@sohonutrition: THAI RED CURRY NOODLES 🍜 This is a great and easy meal to prep for lunch/dinner!! It’s full of flavor and fibre from all those veggies! Save for later☝🏼 •515 kcals per portion •37g PRO, 51g CHO, 21g FAT Serves 2: -1 tbsp of olive oil -1 tbsp of garlic/ginger paste -2 tbsp of Thai red curry paste -200g of protein of choice (chicken/fish/tofu) -1 red onion, sliced -1 red pepper, sliced thinly -Mangetout (as much or as little as you like) -300ml of coconut milk -400ml of water -1 reduced salt chicken stock cube -2 tbsp of light soy sauce -1 tbsp of sriracha -3-4 drops of fish sauce -1 tsp of sugar -100g of rice noodles -Lime juice -Fresh coriander, chopped (optional) -Sesame seeds, coriander & chilli flakes, for garnish Method: 1. Add oil to a pot. Let it heat up. Add in the ginger/garlic paste and 1 tbsp of curry paste. Let this fry off for a few minutes. 2. Add in the chicken and cook for 5 minutes. Then add the red onion, peppers and mangetout. Mix well. 3. Pour in the coconut milk and the water. Sprinkle in the chicken stock cube. Add in the other tbsp of curry paste, sriracha, soy sauce, fish sauce and sugar. Stir and mix well. 4. Let it come to a boil then place in the rice noodles and submerge in the sauce. Lower the heat to simmer and cover with a lid for 10 minutes. 5. Remove the lid. Squeeze in some lime juice and sprinkle in coriander (optional). 6. Divide into 2 portions and top with some extra coriander, sesame seeds and chilli flakes.
