Samosa Inspired Bowl This is definitely my type of meal… Healthy, veggie packed, but absolutely packed with flavour and incredibly delicious 🥲 the Mint and Coriander Raita packs a punch..and the mayo chutney ties it all together to give you that samosa dip page taste! don’t skip it! What you need: - 500g potatoes cubed (I used skin on baby potatoes) - 1 head of cauliflower, broken into florets - 2 cans of salted chickpeas, drained - Frozen peas…(I didn’t measure these) - 1 large white onion chopped  Spice mix - 1 tablespoon of Tumeric - 2 1/2 tablespoons of garlic power (Tesco has garlic powder..way better than granules) - 1 heaped tablespoon of Cumin - 1 heaped tablespoon Garam Masala - 1 tsp chilli powder (optional) - 3 tsp of salt Mint & Coriander Raita - 1/2 Lime Juiced - 20g coriander - 10g Mint - 250g Yogurt (I used Fage 0%) - 1 tsp cumin - 2 tsp agave - 2 garlic Cloves - Salt to taste - Make the Spice Mix and set aside - Mix potatoes with approx 2 tablespoons oil (not too much) and approx 2 tablespoons of the spice mix - Airfry for 20-25 mins - While they are cooking 1 tablespoon of oil go into your cauliflower and onions with a tablespoon of the spice mix and mix the chickpeas and peas with a drizzle of oil and the remaining spice mix then pop them all over the potatoes and cook for the further 15-20 mins, stirring half way if needed. - While they are cooking blend up all the ingredients for the Raita and season to taste. - Serve with Rice if you like and drizzle generously with the Raita, a dollop of mango chutney and lots of fresh coriander..👌🏼 #samosa #indianfood #indianinspired #fakeaway #familymeals #fyp #airfryer #raita #indianrecipes
