Get the recipe below 💚 #PoweredByPistachios Ingredients: 1/3 cup chopped Setton Farms Raw Pistachio Kernels 1 cup thick or Greek-style yogurt 1 small lemon, zested and juiced 2 tbsp. Mint leaves, roughly chopped, more for garnish 3 small cucumbers (ideally Persian variety) diced 1 tbsp. Extra virgin olive oil Sea salt Directions: 1) Slice the cucumbers into small cubes. Place each piece of cucumber cut side-down on work surface. 2) Lay the blade of a chef's knife flat on top of the cucumber and lightly smash down using your fist or the palm of your hand, until cucumbers crack and are slightly flattened. 3) Transfer to a bowl and add the chopped pistachios, yogurt, lemon juice, lemon zest, mint, salt and olive oil.
