Served with crispy rice crackers and fresh mint, it’s a Vietnamese delight that proves you don’t need hours in the kitchen to enjoy authentic cuisine for Asian and Pacific Islanders Heritage Month Ingredients (2-3 servings): - 1 Can Clam Meat (800gram or 28 Oz) - 5 Tbsp Garlic (minced) - ½ Cup Shallots (minced) - ½ Cup Lemongrass (minced) - 2-3 Onions - 2 Cans Young Jackfruit - 2 Tbsp Fish Sauce - 1 Tbsp Tamarind Puree (optional) - 1 Tsp Salt - 2 Tbsp Sugar or Honey - 2 Chili Peppers or 2 Tsp Sa Tế - Toasted Sesame Seeds - Roasted Peanuts - Sesame Rice Crackers (Bánh Tráng or Bánh Đa) - Mint or Viet Corriander - Drain the clams and rinse them thoroughly with clean water. Gently wring out excess water and set aside. - Drain the young jackfruits and cut them into small pieces. Set aside. - Heat the cooking oil in a pan over medium heat. - Add the minced shallots and wait until it translucent before adding the garlic and lemongrass - Add the clams to the pan and sauté for about 5 minutes. - Add the young jackfruit to the pan and sauté until slightly golden. - Add the tamarind puree, maple syrup, fish sauce, chili peppers, and salt to the pan.
