as a Filipino, you did a good job with the cooking procedure. you can always adjust the sourness to your liking. I like my adobo with PINEAPPLE chunks to balance the sourness of the vinegar.

We use a splash of vinegar just to neutralize the flavor or saltiness from the soy sauce. That’s too much vinegar 😭

I fry garlic, ginger and onion first till caramelized. then put the raw chicken add soy sauce, stir it without putting any water until the chicken is brown or looks cooked, then add 1 cup of water-
