@foodporn: We’re at Via Veneto (@viavenetobarcelona), a Michelin starred restaurant in Barcelona. It’s dessert time and maybe l’d go for a flan, but the table next to me ordered a live peeled orange. And this sweet, citrus orange blossom fragrance seduces me. I’ll order it, can’t resist it… The waiter Luis Gonzalez approaches with his cart. Pokes the orange with a fork, lifts it up in the air and puts it up to face. With the other hand he takes the knife, long and well sharpened. It’s a movement I can’t describe, determined and delicate... he rolls the orange to peel it all off in one go and leaves nothing behind. Its naturalness is hypnotic. When he’s done peeling it, he slices it into perfect, juicy, half moons. Leaves the knife on the table... and, to finish, the final touch: take two spoons, press them forcefully against what is left of the orange and spins it again to get all the juice out of it. Let’s taste it... The silence is made. How wonderful is this! And it’s only an orange. Luis, who is polite and attentive, confesses that after 42 years at Via Veneto, he is retiring. He says he is happy to have been able to dedicate himself, despite all the odds, to one of the most beautiful jobs. So long Luis!
