A little over 400 calories per mountain of food. The volume of this dish is crazzyyyy! 🤯  Basil chili beef inspired stir-fry. Macros below 👇🏼 Ingredients:  500g extra lean beef mince  130g hoisin  3 garlic cloves, finely minced  1 tsp ginger, finely diced  1 red chilli, finely diced  2 (160g) carrots, shredded  1/3 head (400-600g) cabbage, shredded  1/2 cup fresh basil (loosely packed)  120g vermicelli noodles  Salt and pepper  Method:  1. Soak the noodles in warm water and set aside.  2. Brown off the mince in a pan on medium to high heat with salt, pepper and HALF of the hoisin.  3. After 5 minutes, add the garlic, ginger, chilli and basil.  4. Cook the beef until the sugars in the hoisin caramelise and darken and the beef becomes nice and sticky.  5. Add the carrot, cabbage and the remaining hoisin with 1/4 cup of water to help steam and sweat down the veggies. If there is too much cabbage, add it in batches. It will eventually sweat down into half the size.  6. Once everything is well combined, drain the noodles and soak them in boiling water for 60 seconds before draining again and adding to the pot. This gives the noodles a head start and ensures an even cook.  7. Stir everything until well combined, serve into containers and store in the fridge for up to a week!  Elevation tip: If you have dark soy on your hands, add 1-2 tbsp with the first half of hoisin to help the colour and caramelisation of the mince.
