Last time i made these, i got invited to the carne asada and i havent forgotten 🥹❤️ measurements below 🫶🏻#birriatacos #Recipe #fyp 3lb Chuck toast seasoned with salt and pepper 1 Head of garlic 1 whole onion 2 quarts water 5 guajillo peppers 3 ancho chili 2 chili de arbol 1 Tbsp peppercorn 1 Tbsp toasted coriander 5 cloves 5 bay leaves 1 cinnamon stick 2 tomatoes 3 sprigs fresh thyme 2 tsp cumin 2 tsp oregano 1 tsp paprika 3 beef bouillon cubes Sear your meat a few minutes each side. Remove and add in 1 onion cut side down along with garlic. Once they have some color, add your meat back in along with 2 quarts of water. Toast up your chilies till fragrant and add to the pot along with all of your spices, tomatoes, and bouillon cubes. Simmer for 1 hr. After an hr, remove all spices and chilis and blend (leaving out the bay leaves and cinnamon stick). Strain and add mixture back to the pot. Add the seasonings & thyme then simmer another 1.5 hrs. Shred the meat and add back to pot. Assemble your tacos by dipping a corn tortilla to the consomé and adding to a pan. Add Oaxaca cheese, meat, onions, cilantro and fold in half. Serve with consomé on the side, finish with some limes, onion, cilantro & enjoy!
