Pour the cream and 1 cup of milk in a saucepan and bring to a boil over medium-low heat. 4. Add process 2 and boil down more. It takes about 20 minutes. 5. Whip the cream cheese (room temperature) and set aside. 6. When it boils down enough to be coated on a wooden spoon, slowly pour it into the cream cheese and mix thoroughly with a whisk. (It is convenient to mix with an electric hand mixer) 7. When the cream cheese is completely mixed, add the liquid pectin and lime juice and mix well. 8. After cooling to room temperature then store in the refrigerator at least 2 hours (can be used the next day after completely cooled). 9. Pour the cooled cream into an ice cream maker then make gelato. When it thickens to some extent, add lime puree and Lutos cookies. 10. Once it is well mixed, set it in the freezer for about 2 hours before serving.
