@bycocoandj: Don’t know bout you but in our house SOUPS are eaten … rain or shine! One of our absolute favs has to be a classic tomato soup that MUST … we repeat, MUST be had with a very cheesy toastie! Here’s our Soup-ahhh easy Creamy tomato soup What you need: 500 grams cherry tomatoes 5 large roma tomatoes, halved Chili flakes 1 head of garlic 1 yellow onion, roughly chopped 1 red pepper olive oil Basil Fresh/dried oregano salt and pepper 4 cups of hot water 1 packet @knorrflavour cream of tomato soup 1 knorr chicken stock pot ½ cup of cream What to do: Preheat the oven at 200°C Drizzle some oil onto a baking pan, add in the onion, head of garlic red pepper, fresh basil and oregano, tomatoes,chili flakes and a sprinkle of salt and pepper. Bake everything until the tomatoes are slightly charred for 45 minutes. In a jug mix in 4 cups of boiling water with Knorr cream of tomato soup and a Knorr chicken stock pot and set aside. To a blender add the baked ingredients together with the cream of tomato mixture, blend until silky and smooth. Transfer to the pot and cook on low heat,check seasoning and add cream. Serve as is or, for a classic pairing make a quick toasted cheese. Love and light Coco and J
