You’re gonna love this one 😩🤌🏾 Chicken marinade:  1kg Chicken (ideally pieces with the bone)  1 tbs yogurt  1/3 cup of Nando’s Garlic PERi-PERi sauce  1 tbs Garlic & Herb Flavour Shaker  Biryani Rice: 3 cups of washed and soaked basmati rice  1 tbs ghee  4-5 cardamom pods  2-3 cloves  1 cinnamon stick  2 bay leaves  Salt to taste  4.5 cups water  Biryani masala: 2 tbs ghee  4 onions sliced  2 tbs ginger garlic paste  Same whole spices as the rice  4-5 green chillies (add less or more up to you)  3 tomatoes  1 pack Nando’s Medium PERi-PERi Rub  Hand full of coriander and mint  Other:  Crispy fried onions  Raisins  Method:  1. Add all of the ingredients for the chicken marinade in a bowl, mix and set aside.  2. Wash basmati rice and let it soak in cold water for 20mins. 3. In a pot, add in the ghee, whole spices and the washed and drained rice and sauté for 3-4 minutes. 4. Now add in the 4.5Cup water and once boiling, cover and on a medium low flame let it cook for 8-9 minutes then leave it covered for 5 mins with the heat off.  5. In a separate pot, add in the 2tbs ghee, sliced onions and whole spices.  6. Once this has sautéed, add in the ginger garlic paste and the tomatoes. Once this has cooked down, add in the PERi-PERi rub and cook this down for 1-2 minutes.  7. Now add in the marinated chicken and cook this down till the chicken is nearly fully cooked.  8. Now In a heavy bottom pan, layer half of the chicken mix, then half the rice, some crispy onions and raisins and coriander. Repeat till you have used all the ingredients.  9. Cover and let this cook on the lowest flame for 10-15 minutes and enjoy!
