Recipe: Ingredients For the milk mixture: • 250ml whole milk • 1 tablespoon instant coffee (adjust to taste) • 400ml evaporated milk • 380g condensed milk For the cake: • 6 egg whites • 75g granulated sugar (for egg whites) • 6 egg yolks • 75g granulated sugar (for egg yolks) • 100ml vegetable oil • 1 tablespoon lemon juice • 1 tablespoon vanilla extract • 120g plain flour For the mascarpone whipped cream: • 200g mascarpone • 400ml double cream • 200g icing sugar • 2 teaspoons vanilla extract Extras: • ~30 sponge fingers (have extras in case you need more) • 200ml brewed coffee (adjust strength to taste) • Cocoa powder (for dusting) Directions 1. Make the milk mixture: 1. Heat whole milk and instant coffee in a pot on medium heat, just until the coffee dissolves. Do not boil. 2. Remove from heat and mix in evaporated milk and condensed milk. Set aside. 2. Make the cake: 1. Preheat oven to 180°C (350°F). 2. In a large bowl, whip egg whites until foamy. Gradually add the first 75g of sugar while whipping until stiff peaks form. Set aside. 3. In another bowl, whip egg yolks with the second 75g of sugar until pale and doubled in volume. 4. Mix in oil, lemon juice, and vanilla. Add the flour and whisk until smooth. 5. Gently fold in half the whipped egg whites, then fold in the rest until no streaks remain. 6. Pour batter into a non-greased 9x12-inch baking dish. Bake for 50-60 minutes. 7. Once baked, run a knife around the edges of the dish and let the cake cool for 20 minutes. 3. Assemble the cake: 1. After 20 minutes, poke holes all over the cake with a skewer or knife. 2. Gradually pour the milk mixture over the cake, letting it soak in between additions. 4. Add the sponge fingers: 1. Briefly dip sponge fingers into brewed coffee (do not soak) and arrange them on top of the cake. 5. Make the mascarpone whipped cream: 1. Loosen the mascarpone by mixing it in a large bowl. 2. Add double cream, icing sugar, and vanilla, then whip until soft peaks form. 3. Spread the whipped cream over the sponge fingers and dust with cocoa powder. 6. Chill and serve: 1.
