With regular preventive maintenance, you don’t need that the factory one works just fine

Don’t do this. The water heater manufacturer put that valve for a reason. Add on the functionality of the shut off, but keep the original hardware

No, as a woman, If I needed to drain the tank I would take off the clogged valve then. The opening would be way bigger

I did that before I installed my water heater it was a total nightmare to get the factory plastic valve off (plastic broke off) but I'm glad I did.
