EGGS FROM AROUND THE WORLD PART 9 🇮🇷 a warm welcome back to eggs from around the world. this Is season 2, part 9 and today’s episode takes us to Iran where we will be making some Baghali Ghatogh. I like to call this one a green shakshuka (minus a few ingredients). It’s got a lovely fresh herby taste with the presence of dill, combined with some turmeric and fava beans, it’s a real treat! Full recipe below and enjoy :) Its worth noting that traditionally this dish uses a special type of bean only found in Iran, I couldn’t find it so I substituted for fava beans Ingredients (2) 1 tbsp olive oil 3 garlic cloves minced 150g cooked fava beans 40g freshly chopped dill 1 tsp ground turmeric 1 tsp black pepper 200ml water 3 large free range eggs Salt to taste Optional garnish Barberries (not traditional but I loved it (1) Start by heating a large skillet with some olive oil, then add the minced garlic and cook for 1 min on a medium heat. Add the fava beans and lightly toast for 2 mins. Add the chopped dill, turmeric and black pepper, then mix very well. (2) Add the water and bring to a simmer. Cover and cook for 10 minutes. Remove the lid, season to taste with salt, then crack 3 eggs in the pan and cover and cook until the yolk is of your desire. (3) Sprinkle with some more fresh dill.
